Juicy chicken, earthy mushrooms, and fresh spinach in a creamy, cheesy sauce β all baked to bubbly perfection.
Ingredients:

1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks or strips

Cream Sauce:

2 tbsp butter

2 tbsp all-purpose flour

1 Β½ cups milk (or half-and-half for richer sauce)

Β½ cup grated Parmesan cheese

Β½ cup shredded mozzarella or cheddar cheese

Instructions:

Preheat Oven:
375Β°F (190Β°C). Lightly grease a 9×13 baking dish. -
Cook Chicken:
In a large skillet, heat olive oil over medium-high heat.
Season chicken with salt, pepper, and thyme.
